No Carb Shrimp Salad Lettuce Cups

I'm always trying to eat carbs in moderation and finding ways to eliminate bread couldn't be easier when you substitute it with lettuce cups. This shrimp salad is a perfect carb free meal that will leave you feeling full without the belly bulge. Enjoy!


2 cups of cooked shrimp

1/4 cup of coconut oil mayo (see recipe)

4 lettuce cups rinsed and dried 

3 celery stalks chopped 

Chopped fresh herbs to your taste; dill and chives

Salt and pepper to taste


  1. In a bowl combine  the shrimp, mayo and celery.
  2. Add herbs, salt and pepper to taste.
  3. Scoop the salad mixture into the lettuce cups.
